Something buttery, something chocolatey, something chewy, something spicy

A couple of weeks ago I was getting ready to lay the boys down for a nap.  We planned to visit friends that night and I volunteered to bring dessert.  While the boys were winding down, I began gathering the ingredients I would need for the dessert I decided to make.  Jack watched me carefully gathering the sugar, eggs and vanilla, and said rather seriously, “you’re not going to make cookies without me mama, are you?”  “No honey,” I assured him.  “I’m not going to make our cookies without you.  This is just a dessert for tonight.”  Phew… defendant acquitted.

So, a little cookie challenge update for you today.  Cookies #4, 5 6 and 7 respectively.

#4 – Rosemary Butter Cookies
These might just be one of my new all time faves.  They were originally developed as wedding favors by Martha Stewart Weddings and they are fantastic.  If you are growing rosemary in your garden this summer, these are a perfect place to put that fresh woodsy herb to good use.  Here is the recipe if you’re interested.  These are light, buttery and refreshing.  And they make your house smell delicious.  Think open house ready, delicious.  Fresh and summery.   Plus they are icebox cookies, so you can make them ahead of time and then just slice and bake when you’re ready.

#5 – Double Chocolate Coconut Cookies
We’ve made these cookies many times.  They’re easy, yummy and yield lots of cookies.  The recipe calls for white chocolate chips (which I never think ahead to buy) so most often I make these with regular chocolate chips.  No one seems to mind my chocolate substitution, though.

#6 – Chewy Chocolate Chip Cookies
Martha has multiple chocolate chip cookie recipes in her book.  I know everyone has their go-to chocolate chip cookie recipe.  Being from Chocolate City USA my go-to recipe of course was the one on the back of Nestle’s bright yellow chocolate chip bag.  But if you appreciate a version of these cookies that retain their gooey softness way beyond the delicious golden hour post baking, you will definitely appreciate this version – that is, if they last long enough to show off their soft and chewy shelf life.

#7 – Pfeffernussen
I thought it a bit odd that these called for a little pepper in addition to the normal baking spices so commonly used, but the pepper definitely added another dimension of contrast to the sweetness of the remaining ingredients.  These are crusty on the outside, soft in the middle and messy all the way around.  They would make a wonderful cookie for warming up on a cold day.

Cookies might be my new favorite thing to photograph.  They move much slower than the boys… except when little hands are sneaking in to grab one more.
